
So I have been waiting for my blueberries to go on sale. From the picture you can prolly tell that they haven’t. However strawberries were on sale for $1.50 per pack. So I decided it was time to make a pie of sorts. Kuchen is really just German for a cakes. See you might learn a little here as well. Anyways its basically a pie from what I made with a fruit topping. Sunday Nite Dinner had a recipe up for one so I decided to give it a try. I did modify it very slightly to give myself more crust. Now I’ll be honest I am not the pie type, however I made it to see how I would do. My wife said it was very tasty and so I thought I would try it. Well still not a pie guy but hey if I was this would have been fantastic. This is pretty easy to come together and if you have made a pie crust before then you can do this one.
Ingredients :
- 1 1/2 cup flour plus 2 tablespoons
- 1/4 teaspoon salt
- 1/2 cup sugar plus 3 tablespoons
- 3/4 Cup (12 Tbsp) butter
- 1 1/2 tablespoon white vinegar
- 5 cups fresh strawberries, halved
- 1/2 teaspoon vanilla extract
- Zest of one lemon
Preheat oven 400º


Now I made the crust like I would a pie crust. Put the flour minus the 2 tbsp, salt, 3 tbsp sugar, and cut up butter in a bowl. You want to cut this in using whatever method you would like. I have a new way demonstrated on the next blog. When you get the butter cut into the flour mix add your vinegar and form your dough. Now Put your dough in the fridge to firm up a little bit. about 10 mins will work.



Cut your Strawberries into halves and put 3 cups in a bowl. Add your 1/2 Cup sugar, lemon zest, vanilla extract, and flour to the strawberries and mix well. When you get it mixed well set aside.
Now take your dough out of the fridge and place in a spring form pan. (9in.) Form your dough to the pan at about 1/4″ bottom thickness and very thin on the sides. Pull out from the center towards the edges and then pull the dough up the pan. While working with the dough if it starts to get very soft stick it back in the fridge for 5 mins or so and let it cool again.

As you can see from the picture the sides do not need to be neat by any means. Just get it high enough to contain the the berries. When you get the dough ready pour your berry mix into the dough and level it out. You can now place this in your preheated 400º oven for 42-50 mins.
Take it out of the oven when done and let cool completely before putting the extra berries on top. Place your berries on the Kuchen whichever way you want to cover it. I pointed them to the center and wrapped them around the kuchen. Cut and serve it will be delicious.

So happy to find this recipe! I worked at a German Bakery during high school in the 70′s and they made a “Kuchen” with whatever fruit was in season, even rhubarb. I have been looking for a similiar recipe for a while. Thanks
