GOT MILK? – Big Chocolate Chip Cookies

img_1365Time to make some good ole Big Chocolate Chip Cookies. Now I usually just buy the tube of cookie dough eat half, and then bake the rest. One time in high school I was in a class called Food Service and Occupations. Basically it was a home ec of baking and such. It was cake class for me my senior year not to mention we just made food everyday. Tell me you wouldn’t want that as a class. I actually taught the class how to make a buttermilk biscuit. I got that obligation because the teacher told us like the second week we were going to start with biscuits. I of course said well thats easy. So she volunteered me to instruct the class. Well lets just say they were amazing and she used my instruction for the next class. Anyways one project was make cookies for some bake sale for the choir department. My group was to make chocolate chip cookies. Well that was a big mistake. Our recipe called to make 6 dozen cookies. When the day was done there were only 2.5 dozen on the cooling rack. Me and 2 others ate cookie dough all day.

Well this time I decided to make the cookies  as I do everything else here. No tubs or tubes for this recipe.  I simply went with the simple Nestle Tollhouse Cookie Recipe found on the back of the chocolate chips bag. Now of course I had to try and modify it a little bit figuring I could make them a little better. Because I love big cookies like you would find in a store I wanted to make my own. However I have tried with the tube dough many times to never get them just quite right. Usually they are never cooked right or they get really hard on top. So with my modifications I made what I would think you would find in some small shops and such. Now I’m sure that this recipe is out there somewhere and its not original to me. I packed them up and put them in a rubbermaid for the wife to take the cookies to work. She said people really enjoyed them. I know I did when they came out of the oven which by the way is the best time to eat them. In My Opinion.

Creole Lemon Pepper Chicken

Ok you brides and brides to be. You know who you are you go to the bridal show and sign up for whatever you can hoping you get something for free. Well my wife is none different and we get a call saying we won a trip to the Bahamas and alls we have to do is come and watch a presentation and then we can get our trip. Not to mention that my sister who went with my wife (and was not engaged) got the same call so most likely anyone who signs up gets the trip. So we go and they bombard you with a sales pitch for a Pot and pan set with knives. Now let me tell you if we had the $2500 in extra money to just give them for some pans I would have bought them he was so good. His sales technique was great. However we didn’t have any money and therefore passed. Oh did I mention if you bought the pans you got not only the Bahamas but like 3 other trips or something like that. Ridiculous! Anyways the meal he made was this Lemon Pepper Chicken. While watching this I thought to myself, Hey I could make this so the next day I went home and made it and it turned out great.

Steak N Friday!!!!! Review

img_1301First and foremost sorry I haven’t updated in a couple days I haven’t been able to find my cable for my camera. I know poor excuse so I finally took one off of a harddrive I had installed in my media center. Gotta find the other cable. anyways…

Steak N Friday… Man I love it. While working at CAT I introduced my co worker into the lovely little steak shack called Steak N Fries. I told him how good it was and at first he was skeptical over the toppings they used. However after one trip he was hooked and we were going at least once a week until we were laid off. We finally went again to enjoy that great sandwich last friday and here is the review.

Strawberry Kuchen

So I have been waiting for my blueberries to go on sale. From the picture you can prolly tell that they haven’t. However strawberries were on sale for $1.50 per pack. So I decided it was time to make a pie of sorts. Kuchen is really just German for a cakes. See you might learn a little here as well. Anyways its basically a pie from what I made with a fruit topping. Sunday Nite Dinner had a recipe up for one so I decided to give it a try. I did modify it very slightly to give myself more crust. Now I’ll be honest I am not the pie type, however I made it to see how I would do. My wife said it was very tasty and so I thought I would try it. Well still not a pie guy but hey if I was this would have been fantastic. This is pretty easy to come together and if you have made a pie crust before then you can do this one.

Triple Chocolate Mousse Cake with a Mirror Glaze

img_1225So for our anniversary I wanted to make something I knew my wife would love. So to top off the Chicken Cordon Bleu I made this cake. It is basically 4 layers of chocolate not just three like the title shows. It did take a while to make and was somewhat of a tedious make but it turned out well and tasted amazing. Even I who rarely will eat a desert like this had a slice. At the end of the night we ended up passing out 4 slices to different people so it was in our house to fatten us up. Chicken Cordon Bleu Raspberry

img_1224So I’m watching Food Network and Tylers Ultimate comes on. So I figure I haven’t watched him before so why not. Well he makes a great little dish around the Chicken Cordon Bleu, and I decide hey I can make that. So I did and it turned out great. Now to my recollection I have never made Chicken Cordon before so I don’t have a lot of experience with it but if I don’t say so myself it was tasty. My wife also loved it so I will go with it was good. He did have some good tips on making it as well some of the other stuff he made will be well used later. I decided to try it for our Anniversary Dinner. I wanted something that would be ordered in a nice restaurant so that I could try it at home. I paired mine with some Smashed Garlic Potatoes, Raspberry sauce, the Sweet Vinaigrette Salad, and for desert the Triple Mousse cake ( recipe to follow on next blog) This meal was delightful elegant and fun to make. The chicken was very easy to prepare and cook. It all came together very well and easily.

Sweet Vinaigrette with dried mixed Berries on top of Spinach

Prolly about 2-3 yrs ago I was over at the Parson’s home for a dinner with some guys. Jenn had a great meal for us, Rogys Honey Glazed Ham, Corn Casserole, and this salad. When I got home that night i had to figure it out. So I started remember the tastes and then finally got ahold of her the next day and I was very close on most of the ingredients. This vinaigrette is very easy to make and tastes so good on some spinach lettuce with some dried fruit on top. Trust me you can go wrong with this. I brought this over to the Blick’s when I made them a meal after Boston was born and Josh was pouring it on the whole meal. Its just a great combo of sweet, salt and other great flavors.

Mandarin Chicken with Brown Rice

img_1192One of my quick fix meals I make is this dish. Its very simple to make but packs quite a flavor punch. I believe an old office mate at one of my old jobs brought this in and she let me have some. I then start guessing the items in it and got all but the ginger. I guessed the wrong spice however I was pretty close. So I brought it home and decided to give my attempts at trying. I however never wrote down the recipe till one day Anne’s old roomate Cori wanted the recipe when she moved out. So I had to measure what I put in and so now I can post it for you guys with my best guestimates of how much is in here. As with most of my cooking with meats and such I cook to taste so I will try my best for this and future recipes to give you the exacts and then let you make your adjustments. Anyways this is best served in my opinion with the brown rice once again. I just really it vs. the white. This chicken and sauce is so flavorful on your first bite you really will be pleasantly surprised. The orange and the spice with the chicken are just a great combination that you wil not be disappointed with.

Turkey Wine’s for Rice

12 years ago I had a meal with one of my good friends’ family. The meal has stuck with me ever since as its been one of my all time favorites to make and eat. Its simple and tastes great. Not to mention its a relatively healthy meal for all you weight watchers that haven’t found anything to eat on my blog yet. The colors of this dish are very nice when everything comes together. Throw a red pepper in there as well and you could have a good color palette. My wife however does not like the onions or peppers so I stay plain for this one. Turkey has been one of my favorite meats to cook with over the years. You can get it to replace beef in almost any meal. Its naturally healthier for you and I love the taste and moistness of it in most dishes.

Black Raz Coffee Cake

Most of my new recipes that I come across are ideas that I’m searching for. For instance I want to make a cake I start looking for recipes and so forth. This one however I just stumbled upon and I decided I had to try it. I put it in the bookmarks and looked for some more recipes so I can compare and decide what ingredients I wanted to use. This pastry also gave me the excuse to try the preserves I made in the previous blog. This turned out extremely well for my first attempt at such a pastry. I brought it to a birthday party and it was gone before I left. So I’m pretty sure others liked it as well.
